Zero the drive. you don't have to let it do it all the way just for a second. Partition just for os x and install. Then repartion for windows and osx. Worked for me

Hey,
I have a MBP, and did all the steps to boot XP, replaced the EFI bootloader, etc. However, the Windows XP partition was screwed up so I inserted the Mac OS X install disc and reformatted the two partitions, also erasing the EFI partition and the xom.efi on the original Mac OS X partition. Now, when I try to go to the installer, no matter what format the HDD is, it says Mac OS X cannot start up on this volume! What do I do to get the Mac OS X installer disc to install on my HFS+ partition! HELP!

I posted on macrumors about this. Use the install OSX CD, disk utility, and use the "erase" on the hard drive (it will actually format the whole thing as one disk) then use partition as per instructions (will format again) then OSX should be able to reinstall.

You are gods, Rich P and ampmhoodlum. That did the trick, re-doing the Mac OS X install now, thanks! I was afraid I was going to have to take it to the Apple Store and have them fix it, well here goes round two of trying!

I let it zero the whole drive, still didn't like it, then I tried it again just zeroing for maybe a minute and clicking skip and worked fine. Boy I hope this solution gets easier :)

I had trouble with this for a while as well .
Just doing a normal erase, whithout zeroing out the disk, fixed the partition table for me, and allowed me to recreate partition to which I could reinstall OSX to.

Folks, there is an easier solution that doesn't involve command-line access. Here's my instructions from the Wiki:
To return your Mac to it's former configuration via the graphical installer:
Insert the Mac OS X Install DVD
Start the Mac and hold down the C key as it boots to boot off the Mac OS X Install DVD
Choose your language
From the Tools menu, choose Disk Utility
On the left-hand side, click on your hard drive
On the right-hand side, choose the Partition tab
Under Volume Scheme, choose 1 Partition
Click on the Options button at the bottom
Choose GUID Partition Scheme, and press OK
Click the Partition button
Once complete, exit Disk Utility
Continue the installer, and you should be able to install OS X on your hard drive again
