Apple's bluetooth wireless keyboard and mouse will work under Windows -- but there are some oddities about Apple's drivers, which are worth taking note of. First, the keyboard and mouse will be randomly inaccessible on the OS selection screen (when you reboot with the option key held down).

Second, during installation and even once Windows is installed, the keyboard and mouse will work perfectly without any configuration -- until you install Apple's bluetooth drivers, along with BootCamp. (You don't really have an option to not install them, however, as you're probably going to want most of the other drivers offered by the BootCamp drivers.) Once you've installed the bluetooth drivers, you're going to find it impossible to configure the wireless keyboard and mouse without having a wired mouse handy; any USB mouse will do the trick. (You can probably get away without having a wired keyboard at all -- but if you find that you need one for some reason, then any USB keyboard will also work.)

Third, different people have had different experiences, but after you're completely convinced that you've done everything right, you may still find that you need to reassociate the keyboard and mouse with Windows every time you reboot. The quickest way I've found to do this is to click the mouse button once, and then turn the keyboard off and back on, and press the enter key once. Then wait a few seconds and press some other key on the keyboard periodically until it starts working.

Having said all of that... keep in mind that the BootCamp drivers are still considered by Apple to be "beta" software, and it's not unusual to have to deal with weird crap like this when you're beta-testing. I must assume that Apple is going to iron out all of these issues in some fashion prior to the release of the final version, in Leopard. (Frankly, I'd still consider these issues to be no worse then the final versions of some other Windows device drivers I've had to deal with in the past!)

Also, It seems like you should have an extra wired keyboard and mouse when you buy a new iMac/Mac Pro/Mac mini with a wireless pack out of the box. I read the instruction to Mighty Mouse and the keypoard, they say, that you need another device to configure 'em. But it actually means, that you should buy 2 pack, 1 wired and 1 wireless. The point of the question is, that if I could first start my new Mac with the wireless pack or should I have an extra wired pack?

Those instructions would indeed apply to the purchase of a separately packaged Mighty Mouse and keyboard; I bought mine from the Apple Store Online with the wireless pack bundled in the box and no wired accessories, and the installed software on the iMac was pre-configured to work with the wireless devices.
