I've successfully installed Windows Server 2003 Enterprise on the mac mini core solo using Boot Camp. Everything works perfectly except I can't seem to get Service Pack 1 installed. It keeps telling me I don't have sufficient space for the uninstall data and that I need 3 mroe megabytes..(?)

The drive has 15GB free so I don't see how that could be right. Any suggestions?

You could always slipstream SP1 into Win2k3 and then reinstall. Or you could put SP1 on an external hard drive an execute it from there.
